PROVENCAL TERROIR

H de Leos Fruité Vert
Made exclusively from local fruit, olives are hand-picked very early in the season (usually early October) and transported immediately to the mill, where they are pressed under the supervision of LEOS teams.
H de Leos Fruité Mûr
Made exclusively from local fruit, olives are hand-picked later in the season, then transported immediately to the mill where they are pressed (“triturated”) under the supervision of LEOS teams.
H de Leos Olives Maturées
Produced exclusively from olives grown in Provence, this oil is made from mature olives (also known as “chômées” or “fruité noir”) grown in a region with an exceptional terroir, characterized by a Mediterranean climate and stony soils.

PRODUCTION

The olive oil is produced with the help of the LEOS teams and the advice of Christine Cheylan. Harvested later in the season, the olives are transported the same day to the mill, where they are “triturated” and bottled.

OLIVE VARIETIES

Essentially Aglandau for the “Matured Olives” oil and mainly Aglandau and Salonenque for the “Fruité Vert” and “Fruité Mûr” ranges.

TASTING NOTES

H de Leos Fruité Vert
Fresh, intense taste, with great aromatic power and a long finish. The oil is characterized by its color (pale green with yellow highlights) and aromatic complexity, with a dominant vegetal aroma of artichoke and hazelnut, typical of an “original” fruité vert.
H de Leos Fruité Mûr
Subtle taste, with good aromatic intensity and a long finish. The oil has a light green color with yellow highlights and aromas of almond, red fruit, ripe apple and flowers.
H de Leos Matured Olives
Intense, complex taste, with great aromatic power and a long finish. Distinguished by its sweetness and dominant, powerful aromas of candied olives and truffles, with hints of cocoa, black tapenade and vanilla.

GASTRONOMIC PAIRINGS

Fruité Vert
Drizzle some fruité vert olive oil over a hot dish (fish, grilled meat, steamed vegetables, risotto, ratatouille…), over a cold dish (raw vegetables: green salads, tomatoes, carrots…) or as an accompaniment to fresh sheep’s or goat’s cheese.
FRuité Mûr
Drizzle ripe fruity olive oil over a hot or cold dish, savory or sweet. Delicious on strawberries or, with a touch of sugar, on autumn fruits (apples, pears, etc.) in tarts or cakes, or on all kinds of savory dishes at the end of cooking.
Matured Olives
Drizzle Matured Olive Oil over simmered dishes, candied vegetables, mashed potatoes or sweet potatoes, or pan-fried mushrooms. It also reveals all its sweetness on mature cheeses or to enhance a slice of toasted bread rubbed with garlic.
