Description
TERROIR
Exclusively derived from olives of the Provençal terroir and produced from matured olives (also known as ‘chômées’ or ‘black fruity’), H DE LEOS MATURED OLIVES oil is produced in a region with an exceptional terroir, characterized by a Mediterranean climate and stony soils. The olive trees benefit from generous sunshine and cool nights, which contributes to giving the oil its unique aromas.
PRODUCTION
Olive oil is produced from olives harvested green during November and December. Cold-extracted and 100% virgin olive oil, the production is strictly regulated by the Protected Designation of Origin (PDO Provence), guaranteeing the quality of cultivation, harvesting, milling, and storage methods.
Ingredients
H DE LEOS MATURED OLIVES oil is primarily made from Aglandau, an olive tree variety native to our region.
TASTING NOTES
Aromatic and very smooth, it offers a beautiful length on the palate and provides the intense and complex taste of an ‘original’ black fruity. It is characterized by a beautiful color and its aromatic richness with an ‘old-fashioned’ ‘chômé’ nose, with a dominance of powerful aromas of candied olives and truffle, as well as notes of cocoa, black tapenade, and vanilla. Its creamy texture makes it a true delight for the taste buds.
GASTRONOMIC PAIRINGS
We recommend prioritizing cold uses as a finishing oil on all types of food and dishes, both savory and sweet. It pairs perfectly with Mediterranean dishes such as salads, aioli, grilled fish, roasted meats, and seasonal vegetables. It can also be used to enhance more exotic dishes, bringing a touch of authenticity to every bite.
HEALTH & NUTRITIONAL VALUES (PER 100G)
Rich in monounsaturated fatty acids and antioxidants, the health benefits of olive oil are regularly discussed in the media and are the subject of numerous international studies. It is also an excellent source of vitamin E and polyphenols.
STORAGE
Olive oils do not have expiration dates but rather a best-before date of two years (DLUO), beyond which they gradually lose their aromatic quality. Because olive oils are susceptible to absorbing odors and deteriorating in light, our bottles are dark-colored. To preserve their aromas and nutritional qualities, we advise keeping them away from light and heat, preferably in a cool, dry place.
