TERROIR AND HARVEST

Harvested from the nectar of lavender flowers cultivated on our Estate and in our region, this honey features a creamy texture and a balanced flavor, both subtle and persistent. Authentic and refined, Provence lavender honey is a true symbol of beekeeping tradition and the natural richness of this region. Lavender honey is typically harvested from late June to early August.

BEE BREED

On our Estate, our bees are primarily Buckfasts and “Caucasians.” Buckfasts are a very gentle bee breed, not prone to swarming, and highly productive. They overwinter quite well and are resistant to certain diseases. They tend to consume a lot of food during winter and produce a significant amount of propolis inside the hive. The so-called “Caucasian” or grey bees are also very industrious and produce a large amount of high-quality wax and honey, partly due to the length of their tongue.

TASTING NOTES

Texture: Obtained by churning, the honey does not crystallize and always maintains its creamy and smooth consistency, making it easy to spread.

Color: Light and golden yellow upon harvest, it whitens under the effect of churning and crystallization.

Taste: Subtle, floral, and flavorful with a pleasant finish.

Aroma: Intense and aromatic, with delicate and fruity notes.

Storage: From a food safety perspective, a jar of lavender honey can be stored for two years, but for honey to retain all its properties, it must be protected from humidity, heat, and especially UV radiation.
